Description

This creamy Cajun shrimp and sausage stew is a comforting and flavorful dish that combines shrimp, andouille sausage, and vegetables in a rich broth.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces andouille sausage, sliced
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 2 cups Yukon gold potatoes, cubed
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 3 cups seafood or chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons fresh parsley or cilantro, chopped

Instructions

  1. Heat olive oil and butter in a large Dutch oven over medium heat.
  2. Add chopped onions, bell peppers, and garlic. Sauté until soft and fragrant.
  3. Stir in sliced andouille sausage. Cook until browned around the edges.
  4. Add diced tomatoes, corn, beans, potatoes, Cajun seasoning, paprika, salt, and pepper. Mix well.
  5. Pour in the broth and bring to a gentle boil.
  6. Reduce heat to low, cover, and simmer for 20–25 minutes or until potatoes are tender.
  7. Add cream cheese and stir until melted.
  8. Pour in heavy cream and shredded cheese. Stir gently until smooth and creamy.
  9. Fold in shrimp and simmer for 4–5 minutes until shrimp are pink and cooked through.
  10. Ladle into bowls and top with sour cream, herbs, or extra cheese if desired.
