- 8 ounces andouille sausage, sliced
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (10 oz) diced tomatoes with green chiles
- 1 cup bell peppers, chopped
- 1 cup onion, chopped
- 2 cups Yukon gold potatoes, cubed
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- 3 cups seafood or chicken broth
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1 cup shredded Monterey Jack or cheddar cheese
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tablespoons fresh parsley or cilantro, chopped
Instructions
- Heat olive oil and butter in a large Dutch oven over medium heat.
- Add chopped onions, bell peppers, and garlic. Sauté until soft and fragrant.
- Stir in sliced andouille sausage. Cook until browned around the edges.
- Add diced tomatoes, corn, beans, potatoes, Cajun seasoning, paprika, salt, and pepper. Mix well.
- Pour in the broth and bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 20–25 minutes or until potatoes are tender.
- Add cream cheese and stir until melted.
- Pour in heavy cream and shredded cheese. Stir gently until smooth and creamy.
- Fold in shrimp and simmer for 4–5 minutes until shrimp are pink and cooked through.
- Ladle into bowls and top with sour cream, herbs, or extra cheese if desired.
