Description

Delicious and easy to make Rice Krispies treats with a twist of strawberries.


Ingredients

Scale
  • ¼ cup (4 Tablespoons, 57 g) unsalted butter
  • 10 ounces mini marshmallows (divided)
  • Pinch salt
  • ½ teaspoon vanilla extract
  • 4 cups rice krispies
  • 1 ounce freeze dried strawberries (crushed to a fine powder)
  • 4 ounces – 8 ounces white chocolate (*see note)

Instructions

  1. Lightly spray an 8×8 square pan or line with parchment paper.
  2. In a large, heavy-bottomed pot, over low heat, melt the butter.
  3. Set aside 1 cup of the marshmallows. When the butter is melted, add the remaining marshmallows. Stir with a rubber spatula or a wooden spoon until melted.
  4. Remove from heat. Stir in vanilla extract and salt.
  5. Stir in reserved 1 cup mini marshmallows, rice krispies, and freeze dried strawberries.
  6. Spread in pan and press into the pan. Let sit for 15 minutes. Cut into squares.
  7. Melt white chocolate in a microwave safe bowl. Dip each square into the melted chocolate and let harden, or you can drizzle the white chocolate onto each square.

Notes

  • Use white chocolate chips for easier melting.
  • Store in an airtight container for up to a week.
