Description

Delicious strawberry mousse tartlets made with fresh strawberries, mascarpone cheese, and a flaky pie dough crust.


Ingredients

  • 1 package Pie Dough (Store-bought for convenience)
  • 2 cups Fresh Strawberries (Ripe for sweetness)
  • 1 tablespoon Lemon Juice (Freshly squeezed is ideal)
  • 1 tablespoon Unflavored Gelatin (Avoid flavored variants)
  • 8 ounces Mascarpone Cheese (Cream cheese can be a substitute)
  • 1/2 cup Granulated Sugar (Divided)
  • 1 tablespoon Granulated Sugar (Remaining portion)
  • 2 cups Whipping Cream (Whip to soft to stiff peaks)
  • 1 teaspoon Vanilla Extract (Divided)
  • 1/2 teaspoon Vanilla Extract (Remaining portion)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out pie dough on a floured surface and cut into 5-inch circles. Press into mini pie molds and place on a baking sheet. Line with parchment paper and fill with pie weights.
  2. Bake crusts for 12 to 15 minutes until golden brown. Remove weights and parchment, bake for an additional 4 to 5 minutes. Cool on a wire rack.
  3. In a blender, blend chopped strawberries with lemon juice until smooth. Heat mixture in a saucepan and stir in gelatin until dissolved. Cool to room temperature.
  4. Combine strawberry mixture with mascarpone cheese and 1/4 cup sugar. Fold until smooth and creamy.
  5. In a separate bowl, whip cream with remaining vanilla extract. Gradually add sugar while whipping until stiff peaks form.
  6. Fold whipped cream into strawberry-mascarpone mixture gently to retain airiness. Fill cooled crusts with mousse filling.
  7. Chill filled tartlets in the refrigerator for 2 to 3 hours to set the mousse.
  8. Serve chilled, topped with whipped cream and garnished with fresh strawberry slices and mint leaves.
