Description
A fragrant and sweet rose and cardamom syrup, perfect for cocktails or refreshing drinks.
Ingredients

- 20 cardamom pods or about 1 1/2 tsp
- 1 cup water (240ml)
- 1/4 cup rose petals, ensure food grade/edible petals
- 1/2 cup honey (170g)
- 1 tbsp lemon juice (15ml)
- 1 tsp dried hibiscus (optional)
- crushed ice
- 2 tbsp simple syrup
- 1 cup soda water (240ml)
- 1 tbsp lemon juice or lime juice (15ml)
Instructions
- Gently bash the cardamom pods in a mortar and pestle to open up. Place in a medium saucepan over medium heat. Toast for 2-3 minutes until fragrant.
- Add water, rose petals, and hibiscus to the pot. Simmer, uncovered over medium-low heat for 15 minutes.
- Turn off the heat. Stir in the honey, lemon juice, and vanilla extract. Cover and leave on the heat (burner turned off) for at least an hour. The longer you let everything steep, the stronger the flavor.
- Place a fine mesh sieve over a small bowl or jar then pour the syrup through the sieve to strain out the cardamom and flower pieces.
- Transfer to an airtight container or jar and keep stored in the fridge until ready to use, up to 1 month.
- Add ice to your chosen glass.
- Add 2 tablespoons of the rose syrup and 1 tablespoon of fresh lemon or lime juice. Fill to the top with soda water (about 1 cup, but this will depend on how big your glass is).
- Garnish with fresh fruit or lemon slices if you like and enjoy.
