A delicious slow cooker recipe featuring tender chicken breasts cooked in a flavorful cranberry sauce.

- 2 lbs boneless, skinless chicken breasts
- 1 can (14 oz) whole cranberry sauce
- 1 cup chicken broth
- 1 onion, diced
- 3 carrots, sliced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 2 tsp dried thyme
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp cornstarch (for thickening, optional)
- Fresh parsley, chopped
Instructions
- Place chicken breasts in the bottom of the slow cooker.
- Add diced onion, sliced carrots, and chopped celery around the chicken.
- In a medium bowl, whisk together cranberry sauce, chicken broth, minced garlic, thyme, paprika, salt, and pepper.
- Pour this mixture over the chicken and vegetables in the slow cooker.
- Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is cooked through and tender.
- Optional: If you prefer a thicker sauce, remove 1/4 cup of the cooking liquid and whisk it with 2 tablespoons of cornstarch in a small bowl. Stir this slurry back into the slow cooker and cook for an additional 15-20 minutes on HIGH until thickened.
- Use two forks to shred the chicken in the pot.
- Garnish with fresh parsley before serving.
Notes
- This recipe can be easily adapted by using different vegetables such as bell peppers or green beans.
- Serve over rice or with crusty bread for a complete meal.
