Ham and Cabbage Soup

Description

A comforting and hearty soup with tender cabbage, ham, and a medley of vegetables.


Ingredients

Scale
  • 1 head cabbage, chopped (see notes)
  • 1 cup chopped onion
  • 1 red bell pepper, finely chopped
  • 2 small carrots, cut in small rounds or chopped (see notes)
  • 2 cups diced lean ham
  • 1 tsp. Spike Seasoning (see notes)
  • 1 tsp. Beau Monde Seasoning (or any all-purpose seasoning)
  • 1 tsp. granulated garlic
  • 1 T dried parsley
  • 2 bay leaves
  • coarse ground black pepper to taste (I used a generous amount of pepper)
  • 6 cups chicken stock (see notes)
  • 2 cups water
  • 2 packets Goya Ham Flavor Concentrate or other ham flavor base (optional, but recommended)

Instructions

  1. Chop cabbage, onion, red bell pepper, carrots, and ham and add to slow cooker.
  2. Add Spike Seasoning, garlic, parsley, Beau Monde Seasoning, bay leaves, and black pepper.
  3. Pour in chicken stock and water, and add Goya Ham Flavor Concentrate. (You may want to add a little salt if you don’t use the ham packets.)
  4. Cook on high for 4-6 hours or on low for 8-10 hours, until cabbage is meltingly soft and carrots are tender.
  5. Serve hot, sprinkled with Parmesan cheese if desired.
  6. Heat about 1 T of olive oil in a heavy soup pot.
  7. Add onions and sauté 3-4 minutes.
  8. Add carrots and bell peppers and cook 3-4 minutes more.
  9. Add cabbage, ham, Spike Seasoning, garlic, parsley, Beau Monde Seasoning, bay leaves, and black pepper.
  10. Pour in chicken stock and water. (You may want to add a little salt if you don’t use ham packets.)
  11. Simmer soup on low for about 30 minutes, then check to see if you need to add a little more water, adding if needed.
  12. Continue to simmer 15-30 minutes more, until cabbage is meltingly soft and carrots are tender.
  13. Serve hot, sprinkled with Parmesan cheese if desired.

Notes

  • Check seasoning and adjust according to taste.
  • If using the Goya Ham Flavor Concentrate, it adds a rich depth to the soup.
  • For additional creaminess, you can blend a portion of the soup and return it to the pot.
