Description

A comforting casserole featuring spaghetti, chicken, and a creamy sauce topped with cheese.

Ingredients

Scale
  • 12 oz spaghetti
  • 2 cups cooked chicken breast, shredded or diced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 cup sour cream
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the spaghetti: Start by bringing a large pot of salted water to a boil. Cook the spaghetti according to the package directions until just al dente. Drain and set aside.
  2. Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add diced onion and cook for about 3 minutes until softened. Stir in the bell peppers and garlic, letting them cook until fragrant and slightly tender.
  3. Prepare the creamy sauce: Lower the heat and stir in the cream of chicken soup, sour cream, diced tomatoes with green chilies, smoked paprika, salt, and pepper. Mix everything until smooth and creamy.
  4. Add chicken and pasta: Fold the cooked chicken and spaghetti into the sauce mixture. Stir gently so the pasta becomes evenly coated with the creamy, savory sauce.
  5. Assemble the casserole: Transfer the mixture into a greased baking dish. Sprinkle Monterey Jack cheese and cheddar cheese evenly over the top.
  6. Bake until bubbly: Bake at 375°F (190°C) for about 20–25 minutes, or until the cheese melts and becomes lightly golden. The edges should be bubbling and irresistible.
  7. Garnish and serve: Finish with fresh parsley for color and a fresh flavor. Serve warm and enjoy every cheesy bite of this comforting Monterey Chicken Spaghetti.
