Description

A refreshing cauliflower salad with a zesty dressing.


Ingredients

  • 1 head head of cauliflower, chopped into florets
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • to taste salt and pepper
  • to taste fresh parsley, chopped

Instructions

  1. In a large bowl, whisk together olive oil, apple cider vinegar, lemon juice, minced garlic, Dijon mustard, paprika, salt, and pepper. Let the flavors harmonize for a few minutes.
  2. Add the cauliflower florets to the bowl with the dressing. Toss well to ensure all florets are evenly coated in the zesty marinade.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to meld the flavors.
  4. Before serving, give the salad a good stir to redistribute the dressing and garnish with chopped fresh parsley.
