Description

Delicious and easy fizzy lemonade scones that are soft and perfect for any occasion.


Ingredients

Scale
  • 3 ¼ cups self-rising flour (spooned and levelled)
  • 1 cup fizzy lemonade (like Sprite)
  • 1 cup heavy cream
  • jam and cream for serving

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Add the flour to a large mixing bowl. Mix in the lemonade and cream until all the flour is moistened and a soft dough forms. Be careful not to overmix, as we want the dough to be somewhat clumpy, or else the scones will be dense.
  3. Transfer the dough to a well-floured surface. Gently knead a few times to bring the dough together, then flatten into an 8-inch disc about 1 inch thick. Use a round cutter to cut into rounds and transfer to the prepared baking sheet with some space between each one.
  4. Bake for 14-16 minutes, or until the tops are lightly browned.
