Description

  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 4 cloves minced garlic
  • 1 tablespoon grated ginger
  • A pinch of black pepper
  • 1 cup potato starch
  • Vegetable oil for frying
  • Chopped green onions for garnish

Instructions

  1. In a large bowl, combine 1/4 cup soy sauce, 2 tablespoons mirin, 4 cloves of minced garlic, 1 tablespoon grated ginger, and a pinch of black pepper. Add the chicken thighs, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  2. In another bowl, add 1 cup of potato starch. You can add a pinch of salt and pepper to this if you like.
  3. In a large, deep skillet or pot, pour in enough vegetable oil to submerge the chicken pieces (about 2 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C).
  4. Remove the marinated chicken from the refrigerator. Take each piece and dredge it in the potato starch, ensuring an even coating. Shake off any excess starch.
  5. Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary. Cook for about 5-7 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
  6. Once cooked, transfer the fried chicken to a wire rack or paper towels to drain excess oil.
