Description

A creamy and cheesy baked pasta dish loaded with artichokes and spinach.


Ingredients

  • 8 oz short pasta (penne or fusilli)
  • 3 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 4 oz cream cheese, softened
  • 1 cup sour cream
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente, then drain.
  2. In a skillet over medium heat, sauté garlic in olive oil until fragrant.
  3. In a bowl, mix cream cheese, sour cream, Parmesan cheese, Italian seasoning, sautéed garlic, and salt until smooth.
  4. Fold in spinach and artichokes until well combined.
  5. Gently combine the cheesy mixture with the cooked pasta in a greased baking dish.
  6. Top with mozzarella and bake at 350°F for 25-30 minutes or until golden brown.

Notes

  • For a bit of extra flavor, consider adding red pepper flakes to the cheesy mixture.
