Description

Soft and delicious ginger oatmeal cookies filled with a creamy filling.


Ingredients

  • 1 cup whole rolled oats
  • 1 cup all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 cup unsulfured molasses
  • 1/2 cup light brown sugar
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together oats, flour, ginger, cinnamon, and baking soda.
  3. In another bowl, beat butter, brown sugar, and molasses until light and fluffy.
  4. Gradually add dry mixture to wet ingredients, stirring until just combined.
  5. Scoop tablespoons of dough onto prepared sheets about two inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
  6. For the filling, beat cream cheese, powdered sugar, and vanilla until smooth. Once cookies have cooled completely, spread or pipe filling between two cookies.
