Soft and delicious ginger oatmeal cookies filled with a creamy filling.
Ingredients

- 1 cup whole rolled oats
- 1 cup all-purpose flour
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/2 cup unsulfured molasses
- 1/2 cup light brown sugar
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together oats, flour, ginger, cinnamon, and baking soda.
- In another bowl, beat butter, brown sugar, and molasses until light and fluffy.
- Gradually add dry mixture to wet ingredients, stirring until just combined.
- Scoop tablespoons of dough onto prepared sheets about two inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
- For the filling, beat cream cheese, powdered sugar, and vanilla until smooth. Once cookies have cooled completely, spread or pipe filling between two cookies.
Notes
- Store cookies in an airtight container to keep them fresh.
- These cookies can also be frozen for later use.
