- 1 lb fresh or frozen shrimp (peeled and deveined)
- 4 tbsp unsalted butter
- 4 cloves garlic (minced)
- 1 cup heavy cream
- 2 cups fresh baby spinach
- 1/2 cup sun-dried tomatoes (packed in oil)
- 1/2 cup grated Parmesan cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, melt butter until bubbly.
- Add shrimp seasoned with salt and pepper; cook for 2-3 minutes per side until pink.
- Remove shrimp from skillet and add minced garlic to sauté for about 30 seconds until fragrant.
- Pour in heavy cream, scraping up any bits from the pan; stir for 2-3 minutes until thickened.
- Stir in spinach and sun-dried tomatoes; cook until spinach wilts.
- Return shrimp to the skillet along with Parmesan cheese and Italian seasoning; mix well.
- Serve over pasta or rice.
