Description

A delicious and creamy shrimp dish with spinach and sun-dried tomatoes, perfect over pasta or rice.


Ingredients

  • 1 lb fresh or frozen shrimp (peeled and deveined)
  • 4 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 1/2 cup sun-dried tomatoes (packed in oil)
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, melt butter until bubbly.
  2. Add shrimp seasoned with salt and pepper; cook for 2-3 minutes per side until pink.
  3. Remove shrimp from skillet and add minced garlic to sauté for about 30 seconds until fragrant.
  4. Pour in heavy cream, scraping up any bits from the pan; stir for 2-3 minutes until thickened.
  5. Stir in spinach and sun-dried tomatoes; cook until spinach wilts.
  6. Return shrimp to the skillet along with Parmesan cheese and Italian seasoning; mix well.
  7. Serve over pasta or rice.
