A delicious side dish of roasted carrots coated in honey and thyme, perfect for any meal.
Ingredients

- 2 pounds fresh carrots, peeled and sliced
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder (optional)
- 1 tablespoon fresh thyme leaves
- 1/2 teaspoon smoked paprika (optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the carrots and cut them into evenly sized rounds or diagonal slices.
- In a mixing bowl, combine carrots with olive oil, honey, salt, pepper, garlic powder, thyme, and paprika. Toss well to coat.
- Arrange the carrots in a single layer on the baking sheet.
- Roast for 25–30 minutes, flipping them halfway through to ensure even browning.
- Remove from the oven and garnish with fresh thyme and a drizzle of honey, if desired. Serve warm.
Notes
- Make sure the carrots are all roughly the same size for even cooking.
- Adjust the seasoning to your taste.
