Description

A delicious side dish of roasted carrots coated in honey and thyme, perfect for any meal.


Ingredients

  • 2 pounds fresh carrots, peeled and sliced
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the carrots and cut them into evenly sized rounds or diagonal slices.
  3. In a mixing bowl, combine carrots with olive oil, honey, salt, pepper, garlic powder, thyme, and paprika. Toss well to coat.
  4. Arrange the carrots in a single layer on the baking sheet.
  5. Roast for 25–30 minutes, flipping them halfway through to ensure even browning.
  6. Remove from the oven and garnish with fresh thyme and a drizzle of honey, if desired. Serve warm.

Notes
