Description

Deliciously grilled chicken breasts marinated in a sweet and tangy honey lime mixture, served with a refreshing avocado salsa.


Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1/4 cup Honey
  • 1/4 cup Fresh lime juice
  • 1 tablespoon Lime zest
  • 2 cloves Minced garlic
  • 1 teaspoon Ground cumin
  • to taste Salt and pepper
  • 1 cup Jasmine rice
  • 2 cups Chicken broth
  • 2 pieces Diced avocado
  • 1/4 cup Finely chopped red onion
  • 1/4 cup Fresh cilantro
  • 2 tablespoons Olive oil
  • 4 pieces Lime wedges

Instructions

  1. Whisk together marinade: Combine honey, fresh lime juice, lime zest, minced garlic, ground cumin, salt, and pepper in a bowl.
  2. Marinate the chicken: Coat the chicken breasts in the marinade and refrigerate for at least 30 minutes.
  3. Prepare the rice: Rinse jasmine rice under cold water, bring chicken broth to a boil, add rice, cover, and simmer for about 15 minutes.
  4. Grill the chicken: Preheat the grill over medium-high heat, grill chicken for 6-7 minutes per side until cooked through.
  5. Let chicken rest: After grilling, let the chicken rest for a few minutes before slicing.
  6. Mix avocado salsa: In a bowl, combine diced avocado, finely chopped red onion, fresh cilantro, and olive oil. Toss gently.
  7. Assemble the stack: Layer jasmine rice, sliced grilled chicken, and avocado salsa. Garnish with lime wedges.

Notes

  • For best flavor, marinate the chicken overnight.
  • Jasmine rice can be substituted with basmati rice if desired.
  • You can adjust the amount of lime juice for more tanginess.
