- 4 pieces Boneless, skinless chicken breasts
- 1/4 cup Honey
- 1/4 cup Fresh lime juice
- 1 tablespoon Lime zest
- 2 cloves Minced garlic
- 1 teaspoon Ground cumin

- 1 cup Jasmine rice
- 2 cups Chicken broth
- 2 pieces Diced avocado
- 1/4 cup Finely chopped red onion
- 1/4 cup Fresh cilantro
- 2 tablespoons Olive oil
- 4 pieces Lime wedges
Instructions
- Whisk together marinade: Combine honey, fresh lime juice, lime zest, minced garlic, ground cumin, salt, and pepper in a bowl.
- Marinate the chicken: Coat the chicken breasts in the marinade and refrigerate for at least 30 minutes.
- Prepare the rice: Rinse jasmine rice under cold water, bring chicken broth to a boil, add rice, cover, and simmer for about 15 minutes.
- Grill the chicken: Preheat the grill over medium-high heat, grill chicken for 6-7 minutes per side until cooked through.
- Let chicken rest: After grilling, let the chicken rest for a few minutes before slicing.
- Mix avocado salsa: In a bowl, combine diced avocado, finely chopped red onion, fresh cilantro, and olive oil. Toss gently.
- Assemble the stack: Layer jasmine rice, sliced grilled chicken, and avocado salsa. Garnish with lime wedges.
Notes
- For best flavor, marinate the chicken overnight.
- Jasmine rice can be substituted with basmati rice if desired.
- You can adjust the amount of lime juice for more tanginess.
