Description
A delicious potato dish that’s crispy on the outside and soft on the inside.
Ingredients

- 700 g potatoes, peeled and grated
- 1 small onion, finely chopped
- 200 g hard aged cheese (Tolminc, or substitute with aged cheddar or gouda), grated
- 2 tbsp turkey ham (optional), finely diced
- 2 tbsp butter or vegetable oil
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prep the potatoes: Peel and coarsely grate the potatoes. Place them in a clean kitchen towel and squeeze out as much excess moisture as possible. This step is essential to get that signature crispy texture.
- Sauté the onions: In a large nonstick or cast-iron skillet, melt 1 tablespoon of butter or heat oil over medium heat. Add the chopped onion and cook for about 5 minutes, until translucent and lightly golden.
- Build the base: Stir in the grated potatoes and turkey ham (if using), seasoning with salt and pepper. Flatten the mixture into an even layer in the skillet. Cook without stirring for about 10 minutes, allowing the bottom to brown.
- Add the cheese: Sprinkle the grated cheese evenly over the top of the potato mixture. Gently press down with a spatula. Let it cook for another 5 minutes, so the cheese begins to melt and integrate.
- Flip and finish: Using a large plate or lid, carefully flip the Frika to cook the other side. Add the remaining butter or oil to the pan, then slide the Frika back in. Cook for another 10–15 minutes until golden and crispy on both sides.
- Serve warm: Slide the finished Frika onto a cutting board. Let it rest for a minute or two, then slice into wedges. Serve hot with a side of sauerkraut, a fried egg, or crusty bread.
