Description

Ingredients

  • 2 lbs ground beef
  • 1 medium onion, diced
  • 1 green bell pepper, chopped
  • 2 tbsp minced garlic
  • 1 tbsp seasoning salt
  • 2 tsp chili powder
  • 1 tsp black pepper
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 cans (15 oz) dark red kidney beans, drained
  • 2 cans (15 oz) chili beans, undrained
  • 2 cans (10 oz) Rotel diced tomatoes with green chiles
  • 1 can (15 oz) tomato sauce

Instructions

  1. In a large pot over medium heat, brown the ground beef until no longer pink. Drain excess grease.
  2. Add diced onions and green peppers. Sauté for 4–5 minutes until soft.
  3. Stir in minced garlic and cook for another minute.
  4. Add all seasonings: seasoning salt, chili powder, black pepper, cumin, smoked paprika, onion powder, and garlic powder. Mix well.
  5. Stir in the kidney beans, chili beans, Rotel tomatoes, and tomato sauce.
  6. Bring to a boil, then reduce heat and let simmer for 25–30 minutes, stirring occasionally.
  7. Taste and adjust seasoning if necessary before serving.

Notes

  • This chili tastes even better the next day after the flavors have melded.
  • Feel free to add more spices or toppings like cheese and sour cream.
