Description

Delicious chicken wraps filled with fresh ingredients and topped with salsa and sour cream.


Ingredients

  • 1 lb (about 450g) boneless, skinless chicken breasts, cut into thin strips
  • 2 tablespoons olive oil
  • 1 packet (about 1 oz) taco seasoning
  • 1/2 teaspoon smoked paprika
  • 4 large flour tortillas or wraps
  • 1 cup shredded lettuce
  • 1 large tomato, diced
  • 1/2 cup corn kernels (canned, drained, or thawed from frozen)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/4 cup salsa of your choice

Instructions

  1. In a medium bowl, toss the chicken strips with olive oil, taco seasoning, and smoked paprika until evenly coated.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and slightly browned. Remove from heat.
  3. Lay a tortilla flat on a clean surface.
  4. Spread a tablespoon of sour cream or yogurt in the center. Add a spoonful of salsa.
  5. Layer on shredded lettuce, then add the cooked chicken strips, diced tomato, corn, black beans, red onion, and cilantro.
  6. Sprinkle generously with shredded cheddar cheese.
  7. Fold the sides of the tortilla inward, then roll tightly from the bottom up to form a wrap.
  8. If desired, heat a clean, dry skillet over medium heat. Place the wrap seam-side down for 1-2 minutes to lightly toast and seal it.
  9. Repeat with remaining tortillas and fillings. Serve immediately.
