A comforting slow cooker recipe filled with tender chicken, rice, and flavorful broth.

- 1 lb boneless skinless chicken breasts or thighs
- 1 cup long-grain white rice (uncooked)
- 3 cups chicken broth (low sodium)
- 1 can cream of chicken soup (10 oz)
- 1 cup onion (finely diced)
- 2 cloves garlic (minced)
- 1 cup carrots (finely chopped, optional)
- 0 cup celery (finely chopped, optional)
- 1 tsp salt (or to taste)
- 0 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme or Italian seasoning
- 0 cup heavy cream or milk (optional, added at end)
- fresh parsley (for garnish)
Instructions
- Lightly grease the slow cooker insert.
- Spread uncooked rice evenly in the bottom of the crock pot.
- Add onion, garlic, carrots, and celery over the rice.
- Place chicken on top and season with salt, pepper, paprika, and thyme.
- Whisk chicken broth and cream of chicken soup together and pour over contents.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
- Remove chicken, shred or cube, then return to crock pot.
- Stir in cream if using, adjust seasoning, rest 5 minutes, and serve.
