Description

Delicious and crispy potato skins seasoned with garlic and fresh herbs.


Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons mixed fresh herbs (rosemary, thyme, parsley)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Scrub the russet potatoes under cold water and pat dry. Cut each potato in half lengthwise and scoop out most of the flesh, leaving a quarter-inch rim.
  3. In a bowl, mix olive oil, minced garlic, salt, pepper, and chopped herbs. Brush this mixture generously over both sides of the potato skins.
  4. Place prepared potato skins cut-side up on the baking sheet and roast for 30-35 minutes until golden brown and crispy.
  5. Let cool slightly before serving with your favorite dipping sauces.
