Ingredients

- 4 large russet potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons mixed fresh herbs (rosemary, thyme, parsley)
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Scrub the russet potatoes under cold water and pat dry. Cut each potato in half lengthwise and scoop out most of the flesh, leaving a quarter-inch rim.
- In a bowl, mix olive oil, minced garlic, salt, pepper, and chopped herbs. Brush this mixture generously over both sides of the potato skins.
- Place prepared potato skins cut-side up on the baking sheet and roast for 30-35 minutes until golden brown and crispy.
- Let cool slightly before serving with your favorite dipping sauces.
