A delicious creamy pasta dish with miso and mushrooms.
Ingredients

- 8 oz spaghetti or fettuccine
- 3 tbsp white or yellow miso paste
- 4 cloves fresh garlic, minced
- 8 oz button or cremini mushrooms, sliced
- 1 cup heavy cream
- 2 tbsp extra virgin olive oil
- ½ cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions in salted water until al dente. Reserve 1 cup of pasta water, then drain.
- In a large skillet over medium heat, add olive oil and sauté mushrooms until golden brown, about 5 minutes.
- Add minced garlic to the skillet and sauté for an additional minute until fragrant.
- Stir in miso paste, cream, and reserved pasta water; mix well and simmer for about 2 minutes until the sauce thickens slightly.
- Toss cooked pasta into the sauce along with Parmesan cheese; stir until evenly coated.
- Serve immediately, garnished with extra Parmesan if desired.
Notes
- This dish can be garnished with chopped parsley or more cheese for extra flavor.
