  • 4 cups beef broth
  • 2 cups water
  • 3 packages (3 ounces each) instant ramen noodles (discard seasoning packets)
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Soft-boiled eggs (optional, for serving)

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the thinly sliced beef sirloin and cook until browned, about 3-4 minutes. Once browned, remove the beef from the pot and set it aside to keep warm.
  2. In the same pot, add the minced garlic and grated ginger. Sauté for about 1 minute until the mixture becomes fragrant, releasing its flavors into the oil and pot base.
  3. Pour in the beef broth and water, bringing the mixture to a rolling boil. Add the sliced mushrooms and soy sauce to the pot. Reduce heat to a simmer and let it cook gently for 5 minutes, allowing the flavors to meld.
  4. Stir in the instant ramen noodles and cook according to the package instructions, generally about 3-4 minutes, until the noodles are tender but still slightly firm.
  5. Return the cooked beef to the pot, add the baby spinach, and cook for an additional 2 minutes until the spinach wilts and the beef is heated through.
  6. Drizzle the soup with sesame oil and season with salt and pepper according to your taste preferences. Give everything a gentle stir to combine.
  7. Ladle the hot soup into bowls, garnish with chopped green onions, and add a soft-boiled egg if desired for extra richness and texture. Serve immediately while hot.
