Description

Deliciously moist chocolate chip muffins perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven to 425°F (220°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, mix melted butter and sugar until smooth. Add eggs, buttermilk, and vanilla extract; mix well.
  4. Combine wet and dry ingredients, stirring until just combined. Fold in chocolate chips.
  5. Divide batter evenly among muffin cups and sprinkle with extra chocolate chips.
  6. Bake for 5 minutes at 425°F, then reduce temperature to 350°F and bake for another 15 minutes or until golden brown and a toothpick comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Make sure to not overmix the batter to keep the muffins light and fluffy.
  • You can substitute the chocolate chips with nuts or dried fruit if desired.
