Description

A delicious and colorful vegetable stir fry that is easy to prepare and full of flavor.


Ingredients

Scale
  • 1 tablespoon olive oil
  • ½ small onion, thinly sliced
  • 1 small zucchini, halved lengthwise and thinly sliced into half-moons
  • 1 small red bell pepper, chopped
  • ¼ teaspoon kosher salt, divided
  • 1 Roma tomato, chopped
  • 1 clove garlic, minced
  • ½ teaspoon Italian seasoning
  • ⅛ teaspoon coarsely ground black pepper
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Heat the olive oil in a 10-inch skillet over medium heat.
  2. Add the onion, zucchini, red bell pepper, and ⅛ teaspoon of salt. Cook, stirring occasionally, for about 8 minutes until the vegetables soften.
  3. Stir in the tomato, garlic, Italian seasoning, ⅛ teaspoon of salt, and black pepper. Cook for 3 minutes, until the tomatoes release their juices and everything is tender.
  4. Transfer to a bowl and sprinkle with Parmesan cheese, if using.
