Ingredients

- 1 tablespoon olive oil
- ½ small onion, thinly sliced
- 1 small zucchini, halved lengthwise and thinly sliced into half-moons
- 1 small red bell pepper, chopped
- ¼ teaspoon kosher salt, divided
- 1 Roma tomato, chopped
- 1 clove garlic, minced
- ½ teaspoon Italian seasoning
- ⅛ teaspoon coarsely ground black pepper
- 1 tablespoon grated Parmesan cheese (optional)
Instructions
- Heat the olive oil in a 10-inch skillet over medium heat.
- Add the onion, zucchini, red bell pepper, and ⅛ teaspoon of salt. Cook, stirring occasionally, for about 8 minutes until the vegetables soften.
- Stir in the tomato, garlic, Italian seasoning, ⅛ teaspoon of salt, and black pepper. Cook for 3 minutes, until the tomatoes release their juices and everything is tender.
- Transfer to a bowl and sprinkle with Parmesan cheese, if using.
