- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes (optional, for heat)
- 4 cups chicken broth
- 1 (14 oz) can diced tomatoes, undrained
- 1 cup heavy cream or half-and-half
- 1 cup fresh spinach, roughly chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Crusty bread or garlic bread for serving
- Extra Parmesan cheese for garnish
- Fresh basil or parsley, chopped for garnish
Instructions
- Season the chicken pieces with salt and pepper.
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion and cook until softened, about 3-4 minutes.
- Add the minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for another minute until fragrant.
- Pour in the chicken broth and scrape the bottom of the pot to release any browned bits.
- Stir in the diced tomatoes with their juices. Bring the mixture to a simmer.
- Return the browned chicken to the pot. Reduce the heat to medium-low, cover, and let it simmer for 15-20 minutes, or until the chicken is cooked through.
- Stir in the heavy cream, fresh spinach, and sun-dried tomatoes. Cook for another 5 minutes until the spinach is wilted and the soup is heated through.
- Remove the pot from the heat. Stir in the grated Parmesan cheese until melted and the soup is creamy.
- Taste and adjust seasoning with more salt and pepper if needed.
- Ladle the hot soup into bowls.
- Garnish with extra Parmesan cheese and fresh herbs if desired.
- Serve immediately with crusty bread on the side.

- This soup can be made ahead and reheated.
- Add more vegetables like carrots or celery for added flavor and nutrition.
