Description

A comforting creamy chicken soup loaded with vegetables and flavor.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 4 cups chicken broth
  • 1 (14 oz) can diced tomatoes, undrained
  • 1 cup heavy cream or half-and-half
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Crusty bread or garlic bread for serving
  • Extra Parmesan cheese for garnish
  • Fresh basil or parsley, chopped for garnish

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  3. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  4. In the same pot, add the diced onion and cook until softened, about 3-4 minutes.
  5. Add the minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for another minute until fragrant.
  6. Pour in the chicken broth and scrape the bottom of the pot to release any browned bits.
  7. Stir in the diced tomatoes with their juices. Bring the mixture to a simmer.
  8. Return the browned chicken to the pot. Reduce the heat to medium-low, cover, and let it simmer for 15-20 minutes, or until the chicken is cooked through.
  9. Stir in the heavy cream, fresh spinach, and sun-dried tomatoes. Cook for another 5 minutes until the spinach is wilted and the soup is heated through.
  10. Remove the pot from the heat. Stir in the grated Parmesan cheese until melted and the soup is creamy.
  11. Taste and adjust seasoning with more salt and pepper if needed.
  12. Ladle the hot soup into bowls.
  13. Garnish with extra Parmesan cheese and fresh herbs if desired.
  14. Serve immediately with crusty bread on the side.
