Description

A delicious and healthy roasted vegetable dish featuring butternut squash and Brussels sprouts.


Ingredients

  • 2 cups butternut squash, cubed
  • 2 cups Brussels sprouts, halved
  • 1 cup candied pecans
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp maple syrup

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Peel and cube the butternut squash; trim and halve the Brussels sprouts.
  3. In a large bowl, toss the squash and sprouts with olive oil, salt, pepper, and maple syrup until evenly coated.
  4. Air fry the vegetables in a single layer for 15-20 minutes, shaking halfway through for even cooking.
  5. In the last few minutes of cooking, add candied pecans to warm them through without losing their crunch.
  6. Serve hot, drizzled with any remaining maple syrup if desired.
