A delicious and healthy roasted vegetable dish featuring butternut squash and Brussels sprouts.

- 2 cups butternut squash, cubed
- 2 cups Brussels sprouts, halved
- 1 cup candied pecans
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp maple syrup
Instructions
- Preheat your air fryer to 375°F (190°C).
- Peel and cube the butternut squash; trim and halve the Brussels sprouts.
- In a large bowl, toss the squash and sprouts with olive oil, salt, pepper, and maple syrup until evenly coated.
- Air fry the vegetables in a single layer for 15-20 minutes, shaking halfway through for even cooking.
- In the last few minutes of cooking, add candied pecans to warm them through without losing their crunch.
- Serve hot, drizzled with any remaining maple syrup if desired.
