A delicious and easy treat made with Rice Chex cereal, chocolate, and optional marshmallows.
Ingredients

- 1 box Rice Chex cereal
- 1 ½ cups semisweet chocolate chips
- 6 tablespoons unsalted butter
- 3 tablespoons Irish cream coffee creamer
- 1 teaspoon vanilla extract
- 1/16 teaspoon almond extract
- 2–3 cups powdered sugar
- 1–2 cups Lucky Charms marshmallows (optional)
Instructions
- Measure the Rice Chex cereal into a large mixing bowl. Set aside.
- In a microwave-safe bowl, combine the chocolate chips, butter, and Irish cream coffee creamer.
- Microwave in 30-second intervals, stirring after each, until melted and smooth.
- Stir in the vanilla extract and almond extract until fully combined.
- Pour the chocolate mixture over the cereal. Gently stir until evenly coated, being careful not to crush the cereal.
- Add 2 cups powdered sugar. Stir gently until coated. Add more powdered sugar as needed to fully coat the cereal.
- Spread the mixture onto a rimmed baking sheet lined with parchment paper. Let cool 15-20 minutes, or until set.
- Stir in Lucky Charms marshmallows just before serving.

- Store in an airtight container for up to a week.
- Feel free to customize with other mix-ins like nuts or dried fruit.
