Ingredients

  • 1 pound ground beef (80/20)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 large carrots, peeled and sliced
  • 4 medium potatoes, peeled and cubed
  • 2 stalks celery, sliced
  • 1 (14 oz) can diced tomatoes, undrained
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and freshly ground black pepper to taste
  • 1 cup frozen peas
  • 2 tablespoons cornstarch (optional, for thickening)
  • 3 tablespoons cold water (optional, for slurry)
  • Fresh parsley, chopped
  • Crusty bread

Instructions

  1. In a large Dutch oven or heavy-bottomed pot, brown the ground beef over medium-high heat, breaking it apart as it cooks. Drain any excess fat.
  2. Add the diced onion to the pot and cook for 3-4 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
  3. Add the carrots, potatoes, and celery to the pot. Stir to combine and cook for 2-3 minutes.
  4. Pour in the diced tomatoes, beef broth, and tomato paste. Add the thyme, rosemary, bay leaves, salt, and pepper. Stir well to combine.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the vegetables are tender.
  6. Stir in the frozen peas and cook for 5 more minutes.
  7. For a thicker stew, make a slurry by mixing the cornstarch with cold water in a small bowl until smooth. Slowly stir the slurry into the simmering stew and cook for 2-3 minutes, until the broth thickens. Remove and discard the bay leaves.
  8. Ladle the hot stew into bowls. Garnish with chopped fresh parsley and serve with crusty bread for dipping.
