Description
A delicious pineapple upside down cake with a caramelized topping.

- 1/2 cup unsalted butter
- 1 cup packed light brown sugar
- 1 (20 oz) can pineapple rings, juice reserved
- 10–12 maraschino cherries
- 1 1/2 cups unsalted butter, softened
- 2 1/2 cups granulated sugar
- 6 large eggs, room temperature
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup reserved pineapple juice
- 1/4 cup whole milk
- 1 tablespoon vanilla extract
Instructions
- Preheat oven to 325°F (165°C). Grease a 10-inch tube pan or Bundt pan generously.
- In a small saucepan, melt 1/2 cup butter over medium heat. Stir in brown sugar until dissolved and mixture is bubbly, about 2-3 minutes.
- Pour the brown sugar mixture into the bottom of the prepared pan, spreading evenly.
- Arrange pineapple rings over the sugar mixture, cutting some in half to fit if needed. Place a cherry in the center of each ring.
- In a large bowl, cream together 1 1/2 cups butter and granulated sugar until light and fluffy, about 5 minutes.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together flour, baking powder, and salt.
- In another small bowl, combine reserved pineapple juice, milk, and vanilla extract.
- Alternately add the flour mixture and juice mixture to the butter mixture, beginning and ending with flour. Mix just until combined after each addition.
- Carefully spoon batter over the pineapple arrangement in the pan, spreading evenly.
- Bake for 75-90 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan on a wire rack for 20 minutes.
- Run a knife around the edges to loosen, then invert onto a serving plate. Let cool completely before serving.

- This cake is best served fresh but can be stored in an airtight container for up to 3 days.
