Description

Indulge in the delightful flavors of these chocolate chip cruffins, a perfect treat for any occasion.

Ingredients

Scale
  • 3 cups All-Purpose Flour
  • ¼ cup Granulated Sugar
  • 2 teaspoons Instant Yeast
  • 1 teaspoon Salt
  • 1 cup warm Milk
  • ½ cup Unsalted Butter, melted (plus more for layering)
  • 2 large Eggs, room temperature
  • 1 cup Chocolate Chips (semi-sweet or dark)
  • ¼ cup Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 cup Dairy-Free Milk: Almond or oat milk for a dairy-free option
  • ½ cup Vegan Butter: Substitute with vegan butter for a plant-based version
  • 3 cups Gluten-Free Flour: A 1:1 gluten-free blend can be used

Instructions

  1. In a large bowl, combine the all-purpose flour, granulated sugar, instant yeast, and salt.
  2. In another bowl, whisk together the warm milk and eggs, then pour the wet mixture into the dry ingredients. Stir and mix until a dough forms.
  3. Turn the dough onto a floured surface and knead for 5 to 7 minutes until it becomes smooth and elastic. This step develops the gluten needed for a good rise and structure.
  4. Place the kneaded dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  5. Once risen, roll the dough out into a large rectangular shape on a floured surface. Brush the dough generously with melted butter. Evenly sprinkle the brown sugar, chocolate chips, and cinnamon over the buttered surface, ensuring full coverage.
  6. Roll the dough tightly into a log from one long edge to the other. Cut the log into 12 equal pieces. Twist each piece slightly and place them into a greased muffin tin, shaping them into individual cruffin forms.
  7. Cover the filled muffin tin with a towel or plastic wrap and let the dough rise again for 30 minutes, allowing the cruffins to puff up and become airy.
  8. Preheat the oven to 375°F (190°C). Bake the cruffins for about 20 minutes until they are golden brown and cooked through, with a flaky crust on top.
  9. Remove the cruffins from the oven and let them cool in the pan for 10 minutes. Then transfer them to a wire rack to cool slightly before serving warm or at room temperature.

Notes

  • These cruffins can be served warm or at room temperature.
  • For a plant-based version, use vegan butter and dairy-free milk.
  • Make sure the temperature of warm milk is not too hot to avoid killing the yeast.
